do you think a trip to Venice for a person with CF is unreasonable, given the risk of exposure to Pseudomonas in the waters of the city?

It has to my knowledge never been shown a higher risk of colonization with Pseudomonas in cities where there are canals, whose water is certainly not always "clean" but it circulates.
It is actually discouraged (and forbidden) to swim in the canals and the lagoon around Venice, especially in summer when the influx of tourists and heat can facilitate the general contamination of water channels (but not especially with Pseudomonas) . If you can choose a period less touristy and less hot, you'll enjoy it even more.
