Food

Question
Dear expert team,

I have read all questions in this forum and, interestingly, have come across the question about chees. Up to now, I have not given Louis any blue cheese for fear of possible fungi. This has been clarified now. ;-)

Are there any other foods which one does not think of at this point, but which people with CF should perhaps rather not eat? This is concerning “strange” fungi or other “CF-specific” germs.

And food intolerances notwithstanding, of course.

Many thanks
Michelle
Answer
Hello,

as for “strange” or “CF-specific” germs regarding suitable or unsuitable foods for CF patients, I could not think of anything else of importance. I therefore consulted out CF nutrition expert Angela Altuahs (nutrician consultant at the CF clinic in Frankfurt/Main). We are not aware of any CF-specific particularities that go beyond those you already mention. Generally, however, some universal hygienic measures in the kitchen should be considered. A few comments about this:

- always wash your hands prior to handling food/groceries
- due to risk of salmonellae, always roast poultry very well and clean the countertop
- do not eat fried eggs sunny side up, only over easy, so that the yolk gets thoroughly hot
- always toss fruit or bread with fungus; do not cut out the fungus even liberally
- always process minced meat on the day you bought it

We hope to have helped you with our answer.

Kind regards
Dr. Christina Smaczny and Angela Althaus
